All hail the Crock-Pot! Many moms are turning to the convenience and quickness of the InstantPot. But, Crock-Pots are great for moms who plan. Devote a few minutes at night or in the morning before you go to work, toss everything into your trusted Crock and know that when you come home from work: Dinner is ready. It’s as close as most of us will ever get to having our own cooks and it’s way better than a trip to the drive-thru for some fast food.

If you’ve had your Crock-Pot for ages, though, you’re probably running out of ideas. Especially when your family insists on chicken… again. Fear not. There are plenty of easy Crock-Pot chicken recipes you may not have tried yet or haven’t thought of in a while. Here are just a few to get you started.

1. Honey Garlic Chicken

If you’re ready to try something new without scaring off any of your picky eaters, this honey garlic Crock-Pot chicken recipe is a real winner. It has all the Asian flavors grown-ups love, with all the finger-licking deliciousness kids enjoy.

Alright, here we go• WHAT YOU NEED: 3 chicken breasts 2 cups water 3 tbsp Sriracha 2 tbsp honey 1 tsp sea salt 12 corn tortillas, microwaved 20 seconds or toasted on griddle MANGO SALSA 1 mango, diced 1 avocado, diced 1 cup cherry tomatoes, sliced in half 1 small red onion, diced 1/3 cup cilantro, finely chopped 2 tbsp lime juice 1/2 tsp sea salt . . MAKING: 1️⃣Add chicken and water to Instant Pot. Cook on high pressure for 3 minutes. Instant Pot will take about 10-15 minutes to pre-heat and then the 3 minutes to cook. When complete, press cancel and do a quick release of the steam, waiting until the pressure gauge drops back down and the lid is safe to open. 2️⃣Meanwhile, mix all ingredients for mango salsa together. 3️⃣Remove chicken from Instant Pot and let cool before shredding. Add back into Instant Pot after draining water. Toss chicken with sriracha, honey and salt, mixing well. Add chicken to corn tortillas, then top with mango salsa and serve! . . . Stir to mix well. Add the chicken on top. Cook HIGH 2-3 hours or LOW 4-6. 🔻Electric Pressure Cooker (Instant Pot) Turn the Instant Pot to saute. Once hot, add the oil and if you’re using skin on chicken, add the chicken skin-side down and cook until the skin is lightly browned. Approximately 3-5 minutes. If you’re using boneless, skinless chicken, go straight to the next step. Add the onion and garlic and cook a few minutes until soft. Add the broth, and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon. Add the curry powder, cardamom, salt, pepper, paprika, ginger, brown rice. Stir to mix well. Add the chicken on top. Do not mix. Close lid and seal valve. Set high pressure and cook 23 minutes. Season wings with salt & pepper (optional). Pile the wings on top of the trivet. Close lid and seal valve. Set high pressure and cook 5 minutes. When done, quick release remaining pressure. Carefully remove wings from pressure cooker with tongs. Toss with half the sauce & then continue on to the broil steps below. After broiling, pour remaining sauce on top of wings. If you’re not going to broil your wings, you can toss the wings with all of the sauce and serve. 🔻BROIL (optional but recommended): when done cooking, remove wings from the appliance and lay them on a large baking sheet. Holy smokes we love Italian food! When budgets are tight and a trip to OG (Olive Garden, y’all) just isn’t in the cards this month, might we suggest you scrounge up some white chicken lasagna? Any chicken meat will work, but if you toss in some boneless, skinless chicken breasts, you’ll save yourself some work later. Next, add in whatever veggies you can find in the fridge or freezer — the key is making sure they’re cut into the right sizes to cook all at the same time. Add broth and let the Crock work it’s magic. Want noodles or rice? Add those last, when you’re already ready to eat.
